Deli Chicken Stir Fry

I initially created this dish because I was trying to decrease the amount of bread I was eating. I also wanted something quick and light without a whole lot of fuss.

Now it’s become a household favorite!

Ingredients

  • 14 – 25 slices of Deli Rotisserie Chicken Breast or 8 oz pack of lunch meat.
  • 1/2 Red Onion chopped
  • 1 Bell Pepper chopped (or veggies of your choice)
  • 1-2 tablespoons of Olive Oil
  • Your choice of Rice (brown, jasmine, white, yellow)

Directions

  • Prepare your rice as directed on its package.
  • Chop your onion and bell pepper.
  • Cut your sliced Rotisserie Chicken Breast into smaller pieces (or just pull apart with fingers).
  • Pour your Olive Oil into a frying pan and warm on medium-high heat. Once oil is slightly heated, place sliced chicken in pan.
  • Sauté chicken for 3-5 minutes (or longer if you desire).
  • Add your chopped onion and bell pepper to chicken. Sauté for another 2-3 minutes (or longer if you don’t like crunchy veggies).

Pour your chicken and veggie mixture of the rice and enjoy 🙂

 

This recipe will give you 2-4 servings.

The Original Banana Toast Pastry

Are you a Banana lover? I am! I love eating bananas alone as a healthy snack, cut in slices with honey drizzled on top, in cold cereal, with ice cream…I could go on and on.

The other night, I decided to have a banana as my evening’s dessert.  Then I thought, I want some type of banana pastry –  something with a hint of sweet, slightly crunchy, but soft.

and then The Original Banana Toast Pastry was born…

Ingredients

  • 1 Ripe Banana – sliced medium-thin to thin
  • 2 Pieces of Artisan Bread
  • Spreadable Butter
  • Raw Cane Sugar
  • Pure Maple Syrup (optional)

Directions

  • Pre-heat oven on Broil at a 500 degree Fahrenheit temperature.
  • Butter one side of each slice of bread.
  • Place bread in oven, buttered side up and toast to a medium-brown for about 1 to 5 mins (this depends on how fast your oven broiler browns)
  • Once the 1st side is toasted, butter the other side of each slice and place back in oven for 1 to 5 mins until a medium brown.
  • Once toasting is complete, pull bread out of the oven and place sliced Bananas on top of toasted Artisan bread (a half banana for each piece of toast). Make sure bananas around the edges of the bread hang slightly over, to provide a shield to the crust during the remainder of the broiling process.

  • Put thin tabs of butter on top of the bananas, until all are covered. You can use as much butter as you want. But use caution. You don’t want a too buttery pastry.

  • Sprinkle raw cane sugar all over the top of bananas and butter. Again, you have the choice of how much sugar you want to use. Keep in mind Raw Cane Sugar is sweeter than processed white sugar. But, it’s better for you.

  • Place banana toast in the oven.
  • After 5 mins exactly, take banana toast out of the oven.
  • Drizzle with maple syrup if desired and serve immediately.

You will fall in love with your 1st bite, just like I did.

The butter and raw cane sugar blend together, caramelizing the bananas just perfectly (not mushy or over done). The edges of the banana toast are crunchy, the inside slightly crunchy, yet moist from the butter and natural sweet juice of the bananas combining.

My Version of Mixed Vegetables

 

Ingredients

You will need (1) bundle of each of the following:

Collard Greens, Kale, Spinach, Swiss Chard

  • 1 – 2 Broccoli heads
  • (1) small bag of petite Carrots
  • (1) small Red Onion
  • 1 tablespoon of Olive Oil
  • 1 teaspoon of Morton’s Nature’s Seasons Blend
  • (optional) 1 teaspoon of Cayenne Pepper, if you like spicy)

Directions

  1. Clean/rinse/wash all vegetables.
  2. Pre-cut all veggies.
  3. Pour tablespoon of Olive Oil and teaspoon each of Nature Seasons Blend & Cayenne Pepper into a large frying pan or pot.  Then pour in your vegetables.
  4. Sauté veggies for about 5-10 minutes, stirring occasionally (cooking time depends on how crunchy you prefer your vegetables).

All done!

Healthy, Crunchy, Goodness 🙂

*Tip – Store extras in a glass bowl and cover tightly.  Fresh vegetables will keep for at least two weeks*

The Perfect Crepe Style Bisquick Pancake

Cooking Materials

  • Griddle or Medium – Large Skillet/Frying Pan
  • Spatula, Spoon, Fork
  • Large Mixing Bowl
  • Cookie Sheet/Cake Pan (will explain why later)

Ingredients

  • 2 Cups Original Bisquick Mix
  • 1 1/3 Cups of Unsweetened Almond Milk (try with sweetened vanilla or coconut almond milk for an extra treat 🙂 )
  • 2 Large Brown Eggs
  • 1 – 2 Tablespoons of Melted Butter

First, start off by pre-heating your oven to 175 degrees. If this specific temperature is not listed on your oven, just make sure the temp is below 200 degrees (more on why we’re using the oven later).

Directions

Preheat

  • If you’re using a Griddle, preheat at 375 degrees – or the temperature listed in the instructional manual for your griddle…While your griddle is preheating, you can prepare your pancake batter.
  • If you’re using the Skillet/Frying Pan method, be sure to prepare your pancake batter before preheating your pan. Otherwise, your skillet may get too hot & burn your 1st pancake.

Making The Batter

Step 1: Place milk, eggs and melted butter into a large mixing bowl. With a fork, thoroughly blend the ingredients together. Make sure eggs are mixed well.

Step 2: With the same fork, thoroughly blend the Bisquick with your milk, egg and butter mixture. If any Bisquick clumps up on sides of bowl, use a spoon to scrape sides and blend in with the rest of mixture.

Mix well, leaving as few lumps as possible.

*This step is not necessary: Pour your Batter into a measuring cup. I feel doing this makes it easier to control the batter as you’re pouring onto griddle or in skillet.

Time To Make The Pancakes

Griddle Users: Take 1 tablespoon of butter and spread it evenly across the surface of griddle. You will perform this step each time before pouring a new batch of pancakes onto griddle.

Skillet Users: Place 1 tablespoon of butter into pan & preheat at a medium to medium-high heat. This will depend on the type of stove you have (gas or electric). You will know best how to adjust the temperature of your stove.

Make sure to evenly coat the bottom of pan with the melted butter.  You will perform this step each time before pouring a new pancake into pan.

  • Allow your Pancake to cook on the first side for 3 – 5 minutes.
  • When the tiny bubbles on the top appear to be almost cooked, it’s time to flip your pancake. Press down on the top of the pancake, one time, with a spatula after flipping.

  • Once flipped, you will cook your pancake about another 1 -2 minutes.

What’s The Oven For?

  • Remove your pancake(s) from the griddle/skillet & place on a cookie sheet or in a cake pan (any pan that can hold the pancakes and go in the oven).
  • Lightly butter each side of pancake & place in the oven to keep warm. Placing a light layer of butter on pancake keeps it moist and prevents over cooking or drying out while in oven. Plus, you won’t need any butter when it’s time to eat.

I use the oven to keep pancakes warm if I’m preparing a large quantity, or making other items like bacon & eggs. Nobody likes cold pancakes; and it’s nice for the entire family or you and all of your friends to eat together, instead of at different times.

Turkey Kielbasa Stir Fry

Ingredients:

  • (1) package of Turkey Kielbasa
  • 3 – 4 tablespoons of Olive Oil
  • 1 teaspoon of your favorites Seasoning(s)
  • (1 of each) Yellow, Red, Orange Bell Peppers
  • 1 small Red Onion

Pre-Cut All of Your Ingredients…

  • Slice kielbasa in medium-thick slices (or your preference)
  • Do the same for each of the Bell peppers and onion
  • Pre-heat olive oil in medium to large skillet for about one minute
  • Place sliced kielbasa in pre-heated skillet and sprinkle with seasonings, if using any & stir
  • Brown meat 8-10 minutes or less (depends on how brown you prefer)
  • Stir meat occasionally
  • Once meat is browned to your liking, stir in pre-cut Peppers and Onion
  • Cook another 5 – 10 minutes, stirring occasionally (depends on how crunchy you like your vegetables).
  • All done! Enjoy with rice or pasta!

5 Ingredient Meal, Easy and Fast!

Are you tired of making the same meals over and over again?

Do you want to make a new dish, but don’t want to buy uncommon ingredients that you will never use again?

Luckily, this Salsa Chicken meal only needs Five ingredients:

4 boneless, skinless Chicken breast halves

4 teaspoons Taco seasoning mix

1 cup of Salsa

1 cup of shredded Cheddar Cheese

2 tablespoons of sour cream

Gathering the ingredients is just as easy as preparing the meal…

Step 1: Preheat your oven to 375 degrees Fahrenheit.

Step 2: Place chicken inside a baking dish. Sprinkle the taco seasoning all over the chicken; and pour the salsa generously all over the chicken.

Step 3: Bake for 20-30 minutes.

Step 4: Sprinkle shredded cheese on top of chicken and place back in the oven for about five minutes; or until the cheese melts.

Add sour cream on top if you like!
